Gluten-Free Coconut Burger Buns
Makes 6 buns
Prep time: 35 minutes
Ingredients:
1 cup hot water
1 tsp sucanet (organic sugar)
1 tbsp yeast
3/4 cup white rice flour
2/3 cup Crystal Coco coconut flour
1/2 cup brown rice flour
1 tbsp xanthan gum
1 1/2 tsp clear gelatin
1/2 tsp salt
2 tbsp melted Crystal Coco coconut oil
1 tsp cider vinegar
Method:
Pre-heat oven to 375ºF. Oil a sheet pan with coconut oil.
In a mixer bowl; stir together hot water and Sucanet. Sprinkle yeast over the top and let bloom for 10 minutes.
Sift together rice flour, coconut flour and corn flour. Stir in xanthan gum, gelatin and salt.
When yeast has bloomed, attach a paddle to the mixer. Turn on low and add coconut oil and vinegar. Gradually add the flour mixture. Blend together well, then turn mixer up to medium and beat for 5-6 minutes, scraping down a couple times. The dough will be quite sticky, but if it’s a bit too wet, add a sprinkle of rice flour. (Climate conditions/humidity can cause this.)
Roll dough into six balls; then flatten on the prepared
sheet pan. Bake for 15-20 minutes on the middle rack until browned
top and bottom.
