Coconut Curry Chickpea Burgers
Makes 6 burger patties
Prep time: 20 minutes
Ingredients:
1 x 19 oz can of chickpeas (or about 2 cups cooked chickpeas)
1/4 cup minced onion
3-4 cloves garlic, minced
1 egg
1/3 cup Crystal Coco coconut flour
1 tbsp Crystal Coco coconut oil, melted
1 tsp curry powder
1/2 tsp ground coriander
Salt & pepper to taste
Method:
In a medium-sized bowl; mash the chickpeas well. Add onion, garlic, egg, coconut flour, coconut oil, curry powder, coriander… and salt & pepper to taste. Mix well and form into 6 patties.
Heat a large skillet to medium-low. Add a bit of coconut oil and sauté patties until browned on one side; then flip and finish the other side.
Serve on coconut buns with mayo, tomato, onion, lettuce… or whatever else your appetite requires :)
