Curried-Coconut Sweet Potatoes
Makes 4 servings
Prep time: 30 minutes
Ingredients:
2 medium sweet potatoes or yams, peeled and diced about
1/2 inch
2 tbsp Crystal Coco coconut oil
1 small onion, diced
2-3 cloves garlic, minced
1 tsp curry powder
1/2 tsp ground coriander
Salt & pepper to taste
Method:
In a skillet, melt the coconut oil over medium-low heat. Add sweet potatoes and onions. Saute fro five minutes, stirring regularly.
Add garlic, curry powder, coriander, salt & pepper. Stir in and reduce heat to low. Cover the pan and cook for 15 minutes until tender, stirring every few minutes to prevent sticking.
My sister-in-law says it tastes (Thai-ish). I just call it good :)
