Coconut Pound Cake

Makes a 10 inch tube pan
Prep time: 1 hour 45 minutes

Ingredients:

1 cup butter
1/2 cup Crystal Coco organic coconut oil
2 1/2 cups sugar
5 eggs
2 1/4 cups all-purpose flour
3/4 cup Crystal Coco coconut flour
1/2 tsp salt
1/2 tsp baking powder
1 cup whole milk

(All Ingredients Should Be Room Temperature)

Method:

Pre-heat oven to 325ºF. Line a 10 inch tube pan with waxed paper.

Sift together flour, coconut flour, salt and baking powder. Set aside.

Mix butter, coconut oil and sugar until creamy. Add eggs, one at a time, and mix well with a mixer. Add sifted flour mixture and milk alternately (3 additions of flour mixture and 2 of milk). Spoon batter into prepared pan.

Bake at 325ºF for 1/2 hour, then at 300ºF for 1/2 hour, and complete baking at 275ºF for 1/2 hour or until done when tested with a toothpick. (Colour should be light golden brown)
