Chocolate-Coconut Bonbons
Makes 4-5 dozen (depending on scooping size)
Prep time: 30 minutes
Ingredients:
1/3 cup Crystal Coco coconut oil
1/2 cup evaporated milk
1 cup Sucanet (organic brown sugar) or regular brown sugar
6 tbsp organic unsweetened cocoa
1/2 tsp pure vanilla extract
1 cup organic porridge oat mixture
2 cups organic oatmeal
1 cup organic Crystal Coco desiccated unsweetened coconut
Method:
Heat coconut oil, evaporated milk, Sucanet and cocoa over low/med heat in a medium sauce pan. Let it boil for 1 minute.
Remove from heat and add vanilla extract, porridge oat mixture, oatmeal and desiccated coconut. Stir until well combined. Drop by spoonful onto cookie sheet.
Place in fridge or freezer until set, then transfer to an airtight container and store in fridge or freezer.
Very yummy and will definitely satisfy your chocolate fix, in real healthy way!
